I’m Working on a Recipe for Spinach Salad with Blue Cheese Crumbles, Whole Almonds, Fresh Chicken, White Onions, Tomatoes, and Drizzled with a Cinnamon Pear Balsamic Vinaigrette

We’re working on dinner salad recipes tonight and my dish of choice was a spinach salad with blue cheese crumbles, whole almonds, fresh chicken, white onions, tomatoes, and drizzled with a cinnamon pear balsamic vinaigrette.  It’s not perfect but it is a very good starting point.  One option is to take it more in a harvest salad direction, introducing freshly cut apples and pears instead of tomatoes and onions.  Another is to add a bit of lemon juice to the chicken to sharpen the flavor profile.

This is worthy of more research to make it on the permanent home menu.  We need a standard set of 4 to 7 salads that can be prepared on demand for guests and events that have been tested, retested, and can be reproduced consistently.  And I still need to find the perfect steak reduction sauce

Blue Cheese Almond Pear Cinnamon Salad

Spinach salad with blue cheese crumbles, whole almonds, fresh chicken, white onions, tomatoes, and drizzled with a cinnamon pear balsamic vinaigrette ...

In any event, it was very satisfying with a glass of cold water.  For dessert, I’d like fresh tea with nothing in it, incredibly clean.  Or maybe a banana caramel dish of some sort.
